Poi Nut Bread
 

Ingredients:
¾ C. water 3 eggs, slightly beaten
1 tsp. salt 1 pkg. poi (1 lb. poi)
½ C. chopped walnuts ½ C. shredded coconut
2 C. flour 2 tsp. baking soda
1 C. salad oil ½ C. raisins
1 c. sugar 2 tsp. cinnamon
2 tsp. vanilla
Preheat oven to 350°.
Mix poi and water; blend well. In a large bowl combine flour, sugar, cinnamon, baking soda and salt.
Combine eggs, salad oil and vanilla; add to flour mixture. Stir in poi; add walnuts, coconut and raisins.
Pour into 2 greased loaf pans; bake for 45 minutes.
Makes 2 loaves.
