Guava Refrigerator Cake
 

Ingredients:
2/3 C. sugar 1 9- inch angel food cake
½ C water 1 TBS. lemon juice
1/8 tsp. salt ½ C. boiling water
2 TBS. gelatin 4 egg whites
1 ½ C. frozen guava concentrate
1 C. heavy cream, whipped or 1 pkg. Dream Whip


Soften gelatin in water. Stir into boiling water. Add sugar and stir until dissolved. Stir in guava concentrate and lemon juice. Chill until mixture begins to thicken.

Tear angel food cake into small 1 inch pieces.

Oil a 10 inch tube pan. Put a layer of pieces in prepared pan.

Beat egg whites with salt until soft peaks form. Whip guava mixture until fluffy; fold in egg whites. Pour part of mixture over cake layer and continue alternating layers until all cake pieces and guava mixture are used.

Chill several hours or overnight. Unmold and frost with whipped cream.
Makes 12 servings.
