Lomo Lomi Salmon
 

Ingredients:
1 lb. salted salmon 1 med. round onion, finely chopped
5 large ripe, peeled tomatoes
1 lg. stalk green onion, thinly sliced including green top

Soak salmon in cold water for 3 hours. Remove skin and bones and shred finely.

Mash tomatoes to a pulp.

Combine all ingredients and chill. Just before serving add several cubes of crushed ice.
