Portuguese Yeast Doughnuts


Malasadas
 

Ingredients:
6 C. flour 1 c. evaporated milk
6 eggs 1 pkg. active dry yeast
1 tsp. salt ¼ C. butter, melted
1 C. water ¼ C. warm water
1 tsp. sugar Sugar for coating
½ c. sugar Salad oil for deep frying

Dissolve yeast and 1 tsp sugar in the warm water.

With electric mixer, beat eggs until thick. Put flour into a large mixing bowl; make a well in the center of the flour. Add yeast mixture, eggs, sugar, butter, milk, water and salt. Beat thoroughly to form a soft smooth dough. Cover and let rise until dough is doubled.

Heat oil to 375°. Gingerly, drop dough by teaspoonfuls into hot oil; fry until golden brown. Drain on paper towels.

Shake in a bag of sugar and serve hot. Makes about 7 dozen.
