Puddings and other Sweet Desserts



Rice Pudding
 

Ingredients:
2/3 C. rice 3 C. water
3 C. milk 1 C. sugar
1 egg ½ tsp. nutmeg
1 tsp. vanilla ½ tsp cinnamon
½ C. raisins ½ can canned milk

Steam rice and raisins for 20 minutes in water that has been salted with 1 tsp. salt - without lifting lid.

Add 3 cups milk and let come to a boil.

Combine: egg, sugar, nutmeg, and cinnamon and mix well. Add small amount of the hot milk and stir it into the mixture. Pour egg mixture into milk and rice. Stir and let come to a boil then add canned milk, stirring constantly until scalded and creamy. Add vanilla and stir.
